Potassium sorbate is the salt of sorbic acid and potassium hydroxide. It consists of granules which form a needle-shape and are approximately 0.5mm in diameter and 2mm in length. The granules are off white in colour and soluble in water.

Potassium sorbate is used in processed foods and cosmetics to inhibit mould and yeast formation and therefore increase shelf life. Potassium sorbate is an additive allowed in several food products and is suitable for vegans. However, the level at which it is allowed in each type of food varies and is regulated by EU legislation.
